BoOverall, I love your blog! :) Today's lunch was a version of Michelle Obama's cauliflower mac'n'cheese recipe (I made a big batch hoping it would last me two days, but it might also be three), sautéed cauliflower leaves with smoked paprika and a cucumber salad with dill. I'm about to make coffee and nibble on some dark chocolate.

Steak and red onion burger with chips. Rhubarb crumble and custard afterwards.
I'm eating a lot of chips at the moment. For some reason potatoes never seem to last long in my house before they sprout tentacles; perhaps they're desperate to escape. I used to buy small numbers of potatoes every three or four days but now I'm shopping on a weekly basis I've found large bags of potatoes start to get unappetising when I get near the end, so I'm relying on frozen chips and hash browns instead.

My way round that is to batch cook mashed potato - it'll last about a week in the fridge in an airtight container and can even be frozen as well!

Yes, it's a great recipe and it fantastically 'tolerates' me playing with what I've got rather than sticking to it in full each time, which I love. :) Carrot ginger soup and a side of homemade kale chips. That sounds fantastic! I might be stealing lunch (or dinner) ideas from you this time! :) Today it was the other half of the cauliflower mac'n'cheese and gherkins. There was no time for dessert.

Homemade pizza with onions, peppers, and tomatoes. After baking, it's topped with some arugula and a drizzle of balsamic. Makes me feel fancy lol. Bowl of fresh. mixed berries for dessert.

Planning something similar myself for tomorrow or Friday - I finally managed to buy bread flour and yeast, and I got a new food processor this week and I'm looking for opportunities to play with it.

Modified Chicken Caesar Salad. By modified I mean my version rather than a classic recipe but it’s near enough. Whenever I have this I’m reminded of how fantastic this concept of crisp lettuce, roast chicken, croutons, and a dressing with grated Parmesan all tossed in at the end is. I think it may be my favourite ever salad.

After 3 days of batch cooking I've managed to cram 12 meals in the freezer. The aim is now to keep on top of it. Today's meal was chicken, sweetpotato and chickpea slightly spiced stew

Roasted vegetable salad with a balsamic vinaigrette and a little feta cheese.
Thick slice of homemade oat bread slathered in butter with a sprinkle of sea salt.
Red rooibos tea and a few small chunks of dark chocolate to top it off.

It was meant to be pitta pockets with fried halloumi, tomato and humus. However I had to throw the pitta and just eat the rest. Bought the pitta last week and it said use by July 2020 but I split the bag and froze them in packets of 2 straight away. Went to eat them and all mouldy. Never mind the rest of the stuff was nice.
