Opera and ballet productions tour with an orchestra. A short 1 or 2 week run of a musical I suspect will have its own touring orchestra, longer set downs I don't have a foggy about.

I have a couple of musician friends who sometimes go on tour with musicals, and normally they're away for the whole tour.

In the UK the orchestra usually tour with the show. I believe in the US it is more common to have a key ‘core’ group of musicians that tour, with local musicians employed to make up the numbers.
