This really annoys me with music gigs too. A tour will be announced, an onsale date fixed, but ticket prices are never revealed until they go onsale, and I have to hope that I can afford it. Why can't they release ticket prices at the same time as the announcement? Then I can decide things like if I can afford to go, if I need to save, travel etc. It seems so needless to keep prices hidden until they go onsale!

Because if they did you wouldn’t even bother looking for tickets. I dislike the practice too - I don’t know why seating plans and prices aren’t published in advance as it would probably ease traffic when tickets go on sale and make it easier for everyone - but I guess they’re hoping by not telling you and making you log on to find out, they might get an impulse buy out of you. But if I get on the website and tickets are too expensive, I won't buy them anyway? It doesn't benefit anyone!

Dynamic pricing.
They change the price of the tickets depending on the number they have sold. If they published the prices people would be able to hold them to the advertised price.
It’s also why ‘tickets FROM £n’ is so common.

I guess they want you deciding whether or not they're too expensive whilst simultaneously under time pressure to buy them or miss out.

Also, just because the system shows you one particular price, another potential customer could be logging on at the same time and see the same time listed at another price.
Caveat, not so common yet with theatre bookings, but you see this all the time with other industries.
