From what I've seen on YouTube, the whole show isn't live. Only the main numbers.
So you have the actors on stage performing the songs, whilst the audience stand around the various stages where each number is performed, combined with the original animation interlocking each scene.
There are also the use of puppets. Both the eels Flotsam and Jestsom are puppets, as are some of the frogs, flamingos etc in the Kiss The Girl scene. Also the poor unfortunate soles who couldn't pay Ursula's fee and who are damned to spend eternity in her hellish lair are also puppets.
Although vocally okay and dressed in red, Shaggy look (in any way) like a crab.
Queen Latifa as Ursula look great! In fact, at one point she steps out of the tentacled costume (don't know in she's lost some weight) and looks fabulous. Not a word I use regularly or lightly.
Rest assured in the Fathom's Below sequence on board the ship, there is a real life sheepdog with the audience waving ribbons to make it look like the sea as it ebbs and flows.
Prince Eric and Ariel in the boat during Kiss The Girl look great.
There are however people dressed as crabs in the Les Poissons song in the kitchen
